Cooking Instructions for Rope Sausage:

Grill each side 7-9 minutes on med-high heat to 155°

Stovetop – Simmer in water (half way up the sausage) for 7-9 minutes on each side on med-high heat to 155°

Oven - Cook at 350° for 25-35 minutes until temperature reaches 155°

Octoberfest Sausage Soup
1/2 lb. smoked sausage
1 cup beef broth
1 cup chicken broth
1/4 cup coarsely chopped celery
1/4 cup coarsely chopped onion
1/4 cup coarsely chopped greed pepper
2 potatoes, diced
2 Tbls. cornstarch dissolved in 2 Tbls. water
1 cup (4 oz.) shredded Swiss cheese
1 can (8 oz.) sauerkraut, drained
2 cups half and half
pepper to taste
2 green onions, sliced

Combine broths, celery, onion, green pepper and potato in soup kettle; bring to boil over high heat. Reduce heat to low, simmer until vegetables are crisp-tender, about 15 minutes.  Add dissolved cornstarch; cook until soup thickens.  Cut sausage into small pieces.  Add sausage, cheese, sauerkraut, half and half and pepper.  Continue heating until mixture is hot.  DO NOT BOIL.  Serve immediately.  Garnish with green onions.

Horseradish Recipe Ideas:

Easy Horseradish Sauce

  • 1/2 cup chili sauce
  • 1/2 cup catsup
  • 1/4 cup prepared horseradish
  • 1 tablespoon lemon juice
  • 1 tablespoon Worcestershire sauce

Blend and chill.

Horseradish Dip

  • 2 cups dairy sour cream
  • 1/4 cup prepared horseradish
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon celery seed
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 cup finely chopped stuffed olives

Blend ingredients. Chill. Serve with crackers.

Horseradish Cream Sauce

Add horseradish to mayonnaise or any salad dressing. The amount to add depends upon personal preference.  Use as a spread with meat or fish sandwiches
